<p>Preparazione:</p>
<p>In una padella antiaderente far rosolare uno spicchio d&#8217;aglio tagliato a metà con le  zucchine tagliate a julienne ed un pò d&#8217;olio.</p>
<p>Quando le zucchine appaiono cotte, sono sufficienti pochi minuti, salare il tutto.</p>
<p>Scolare gli spaghetti  molto al dente e versare direttamente in padella. Farli saltare con una spolverata di curry (se necessario aggiungere un pò d&#8217;acqua di cottura della pasta) e del parmigiano grattuggiato.</p>

<p><strong>Ingredienti</strong> per 6 persone</p>
<p>100 g di Prosciutto di Parma a fette<br />
200 g di ricotta vaccina<br />
100 g di Parmigiano-Reggiano grattugiato<br />
250 g di panna fresca<br />
1 uovo<br />
2 tuorli<br />
poco sale, pepe, noce moscata </p>
<p>per la salsa:</p>
<p>100 g di erbette miste cotte<br />
1/2 spicchio d’aglio<br />
30 g di panna<br />
30 g di latte<br />
1 cucchiaino di burro<br />
sale<br />
<strong>Preparazione</strong></p>
<p>In una casseruola su fiamma bassa fondete nella panna il Parmigiano-Reggiano grattugiato, poi allontanate dal calore e unite la ricotta sbattuta con l’uovo, i tuorli, un pizzico di pepe e una grattugiata di noce moscata. Controllate di sale. All’impasto incorporate 50 g di Prosciutto di Parma tritato. Versate il composto negli stampini imburrati e infarinati e cuocete a bagnomaria in forno a 200° per 20 minuti, poi abbassate la temperatura a 150° e proseguite la cottura per 5 minuti.</p>
<p>Nel frattempo preparate la salsa: rosolate nel burro l’aglio e le erbette, poi frullate unendo il latte e la panna. Aggiustate di sale.</p>
<p>Sfornate gli sformatini e attendete 5 minuti prima di sformare le preparazioni.</p>
<p><strong>Presentazione</strong>: adagiate gli sformatini nei piatti, rivestite la base con una fettina di Prosciutto di Parma e decorate la superficie con una fine julienne di Prosciutto di Parma. Completate con la salsa.</p>
